RECIPE OF THE WEEK...VEGETARIAN RECIPES: RECIPE OF THE WEEK...VEGETARIAN RECIPES:

SPICY VEGETERIAN LASAGNA INGREDIENTS 1 (16 ounce) package lasagna noodles 2 teaspoons olive oil 2/3 cup diced red bell pepper 2/3 cup diced orange bell pepper 2/3 cup diced yellow bell pepper 2/3 cup diced green bell pepper 1 small yellow onion, diced 2 (14.5 ounce) cans diced tomatoes 1 (6 ounce) can tomato paste 1 1/2 cups water 1 dash crushed red pepper flakes 1/4 cup grated Parmesan cheese 1 (15 ounce) container ricotta cheese 1 (8 ounce) package shredded mozzarella cheese 4 eggs 1/4 teaspoon black pepper 1/4 teaspoon dried oregano, crushed 1/4 cup grated Parmesan cheese (optional) DIRECTIONS 1. Bring a large pot of lightly salted water to a boil. Cook lasagna pasta in boiling water for 8 to 10 minutes, or until al dente. Drain, rinse with cold water, and place on wax paper to cool. 2. Cook bell peppers and onion in olive oil in a large sauce pan until onions are translucent. Stir in diced tomatoes, tomato paste, water, and red pepper flakes. More red pepper flakes can be added if spicier sauce is preferred. Simmer for 30 minutes. 3. Preheat oven to 375 degrees F (190 degrees C). In a medium bowl, combine Parmesan cheese, ricotta cheese, mozzarella cheese, eggs, black pepper, and oregano. 4. Place a small amount of sauce in the bottom of a 9x13 inch baking dish. Reserve 1/2 cup of the sauce. Place three lasagna noodles lengthwise in pan. Layer some of the cheese mixture and the vegetable sauce on top of noodles. Repeat layering with remaining ingredients, ending with noodles. Spread reserved sauce over top of noodles. Sprinkle with grated Parmesan cheese, if desired. 5. Cover dish with foil, and bake for 40 minutes or until bubbly. Remove foil during last 10 minutes of baking. SERVE WITH A FRESH GARDEN SALAD & GARLIC BREAD

CARIBBEAN SWEET POTATO SALAD INGREDIENTS 1 large russet potato, peeled and quartered 1 large sweet potato, peeled and quartered 1 cup corn 1 teaspoon prepared Dijon-style mustard 2 tablespoons fresh lime juice 3 tablespoons chopped fresh cilantro 1 clove garlic, minced 3 tablespoons canola oil 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1 cucumber, halved lengthwise and chopped 1/2 red onion, thinly sliced 1/4 cup finely chopped peanuts DIRECTIONS 1. Place the Russet potato pieces into a large saucepan, and cover with salted water. Bring to a boil, turn the heat down, and simmer for 10 minutes. Add the sweet potato, and cook about 15 minutes more. Remove a piece of each potato, and cut it in half to see if it is cooked enough. Once the potatoes are tender, add corn kernels; cook another 30 seconds. Drain through a colander. Fill the saucepan with cold water, and drop vegetables into water. Cool for 5 minutes, and drain. 2. In a large bowl, whisk together mustard, lime juice, cilantro, and garlic. Slowly whisk in oil. Mix in salt and black pepper. Cut cooled potatoes into 1 inch cubes, and add to dressing along with cucumber, and red onion. Toss well. Serve at room temperature or chilled. Toss the peanuts in just before serving.

FROSTED BANANA BARS INGREDIENTS 1/2 cup butter, softened 1 1/2 cups white sugar 2 eggs 1 cup sour cream 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1 cup mashed ripe bananas 1 (16 ounce) container cream cheese frosting DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan. 2. In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Combine the flour, baking soda and salt; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared pan. 3. Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Allow bars to cool completely before frosting with the cream cheese frosting. Ok cooks, here you go. These recipes are for those who don't eat meat...so lets get to cookin. Let a sister know if these recipes work for you! THIS IS FOR MY MARRIED AND INVOLVED COOKS! HERE'S A ROMANTIC SUGGESTION TO SPICE UP THINGS AT HOME. PLAY CHEF AT HOME When was the last time you had a romantic dinner with your spouse? You don't have to have a special occasion to host a romantic dinner for your spouse. Set aside the excuse you can't cook. If you are culinary-challenged, you can still plan a romantic dinner at home for the two of you by either choosing simple recipes to follow or by purchasing some of the meal courses from a restaurant or store. Time Required: As long as you want it to 1. Set the stage of your romantic dinner by making sure the two of you will be alone. If you have children, arrange for babysitting at someone else's home. 2. Plan your romantic dinner on an evening of a week that you are sure your spouse won't have other time commitments already scheduled. 3. Do you want the romantic dinner to be a surprise or not? If it is a surprise, light candles in the entrance of your home to surprise your spouse. If the dinner won't be a surprise, consider giving your spouse an invitation that you write yourself. Send the invitation by mail, leave it on your mate's pillow, send it with a bouquet of flowers, leave it on the dash of your spouse's car, etc. Your invitation needs to be specific as to when the romantic dinner is planned. Be creative! 4. Set the table with a tablecloth, cloth napkins, nice dinnerware, crystal, unscented candles, and flowers. The napkins can be rolled or folded in a pretty way. Sprinkle the table with rose petals or sparkly heart shaped sprinkles. You can set floating candles in small glasses filled partly with cranberry juice. 5. Decide on your romantic dinner menu. Keep it simple, but don't forget the appetizers. Plan on serving foods that your spouse likes. This isn't a time to experiment with a new recipe. 6. If you are going to order your part of your romantic dinner from a restaurant or other source, make sure you have time to transfer the menu items to attractive bowls and platters. 7. Choose the music you want to listen to ahead of time, and have soft romantic music playing in the background. 8. Create dimmed lighting for the room where you will be dining. Small, white Christmas light strings can have the desired look. So can a fire in a fireplace. 9. Turn off the television, computers, and other distractions. ROMANTIC DINNER 4-2

Vegetable Stir-Fry 1 tbsp infused chili oil 1-inch piece ginger root, sliced 3 cloves garlic, sliced thinly 4 baby carrots, sliced lengthwise, cut in 1/2 2 scallions, sliced in 1" slices 8 dried woodear mushrooms, soaked in hot water 1/2 green bell pepper, sliced lengthwise and cut in 1/2 1 jalapeno pepper, chopped 1 handful chopped cashews black sesame seeds, for garnish granular kelp 2 cups cooked white rice, or basmati 1/2 cup bottled peanut sauce Have all ingredients ready before cooking. When the mushrooms are soft, drain them well and cut the large ones in half. Set aside. Heat wok or large nonstick skillet over medium-high heat. Add oil and then ginger and garlic. Saute aromatics for 1 minute and then add the carrots. Stir-fry them for a couple of minutes until they are crisp-tender, then add next hardest veggie which is the green peppers. Stir-fry until crisp-tender and then add the mushrooms and the scallions. Cook for 1 minute. Add nuts and black sesame seeds. Saute for one moment and then take it off the heat. Sprinkle stir-fry with kelp and pour the sauce over. Toss well. Divide rice among two plates. Pour 1/2 the veggie mixture over the rice. Garnish with some more scallion if you wish. Variation: Add some stir-fried tofu or tempeh. Or some five-spice tofu if you have it.

He or she comes to know more about your personal life and talent while the same is not possible if you go to a movie or other crowded place. Before answering the question, I want you to be honest and imagine what would excite you the most when someone invites you on a date at his or her home. Cooking for a Date!

What would you do for a date? Michelle Cunningham, 41 an comedian, writer, and storyteller, is following the age old cliché- 'the way to a mans heart is through his stomach' literally. Standing on busy street corners, holding a cardboard sign that's seen better days and covered with autographs, with a big smile and gregarious attitude, She brings grins, waves and double-takes from all who see her…   But does it work? I had to ask. It seems a bit risky to me. Michelle tells me that the way she usually plans it is as follows. A man will see her, stop, and ask her if she's serious. If there is any mutual attraction, and they agree to a dinner date, she prefers to chat on the telephone for a week, and if that goes well, she will then meet her hungry suitor at a supermarket, where they pick out all the groceries needed for his favorite meal. He forks out the cash, then they go off to her place where she'll whip up anything from genuine soul food to her award winning lasagna.   Then what? I ask… She tells me that she likes to serve red zinfandel with her meals, and perhaps rent a video for later, and… if all goes well… a love connection is made! "What about dessert?" I ask. She replies, "I hope dessert is me!" So far, in the year she's been cooking for a date, Michelle, has met many interesting men, including a pro football player for the Arizona Cardinals, and all have turned into good friends, but she's still searching for Mr. tall, dark & handsome.   This all started when Michelle's mother in Arizona encouraged her to head out West to find fame & fortune, and perhaps a good man for her three children. Michelle, a Mormon, wasn't meeting very many men of her race in her local church. So she packed up and headed out to Hollywood. Some folks on the street have teased her, some have mistaken her for a prostitute on Hollywood & Vine, one man from Beverly Hills gave her fifty dollars and told her that she made his day!  

 

Michelle is currently working on a cookbook, comedy appearances, poetry, and cook for a date socials in the Los Angeles area. "Men in L.A. are starving for homecooked meals, and the women who can do it". Michelle suggests you keep a man full in the kitchen, or in the bedroom.
