Whats Up to my BlackPlanet family Chef D'Andre here, Private Chef to families,and all around busy people that don't have time to shop or cook for themselves. Well just consider me as you very own Blackplanet Private Chef. Many of you send me questions about your own cooking at home or when is the right time to buy strawberries.So please ask me anything I will answer you! This blog will highlight some of the questions I get from you and the answers I will provide. I will be posting the answers on my blog so everyone can partipate with their own comments.Do you need advice to help speed your way through the kitchen? CHICKEN LETTUCE WRAPS
Ingredients 3 tablespoons vegetable oil 2 1/2 pounds thin-cut chicken cutlets, cut into thin, 2-inch-long strips 2 tablespoons grill seasoning, recommended brand Montreal Seasoning by McCormick 2 red bell peppers, cut into thin, 2-inch-long strips 1 onion, chopped 3 large cloves garlic, chopped 3/4 cup hoisin sauce 1/4 cup chicken stock 1 8-ounce can sliced water chestnuts, drained 1/4 pound fresh bean sprouts 3 tablespoons toasted sesame seeds 1 head iceberg lettuce Yields: 8 servings --------------------------------------------------------------- Preparation Place a large nonstick skillet over high heat with 3 turns of the pan of vegetable oil, about 3 tablespoons. Season the chicken with the grill seasoning and, once you see ripples in the oil, add the chicken pieces the hot skillet in an even layer. Stir while it cooks through, about 3 minutes. Add the red bell pepper, onion, garlic and continue to cook for 3-4 more minutes. While the chicken and veggies are cooking, combine the hoisin sauce and the chicken stock in a small bowl. Add the liquid to the chicken along with the drained water chestnuts and stir to coat everything in the sauce. Cook for about another minute to heat up the water chestnuts, then add in the bean sprouts. Stir to combine and transfer to a serving bowl. Sprinkle the top with the toasted sesame seeds.
Grilled Cheese andTomato Basil Soup Ingredients 1/2 tablespoon olive oil 2 tablespoons chopped shallots 1 teaspoon minced garlic 1 (10 1/2 ounce) can condensed chicken broth 1 soup can water 1 (28 ounce) chopped tomatoes 1 tablespoon chopped fresh basil or 1 1/2 teaspoons dry basil salt & pepper 3/4 cup heavy cream Directions 1Heat oil in heavy saucepan. Add shallots and garlic and sauté over med-low heat 2-3 minutes -- be careful not to burn garlic. 2Stir in broth, water, tomatoes and basil (if using fresh basil you will add it later). Add salt and pepper. 3Heat cream till just warm (either on stove top in a separate sauce pan or in microwave) then stir into tomato mixture. Bring just to a boil; immediately reduce heat and simmer 5 minutes. If using fresh basil, stir in at this point. 4Do not allow soup to boil. 5Serve immediately. 6**Note** We like a smoother soup so I usually send the canned tomatoes through the blender or food processor before adding them to the mixture.
