Pork is a delicious meat and it is especially nice when served with one of your favorite homemade gravy recipes. There are various cuts of this type of meat and each one has different preparation methods.

Just three chefs remained heading into the Top Chef: Just Desserts finale (airing on Bravo, channel 60 in Scottsdale): Chris Hanmer, Matthew Petersen and Sally Camacho. Which one would take the big win at the end of Wednesday night's finale? The trio is told that their final challenge involves "making a dessert for that special person in your life." Three renowned dessert chefs are brought out, and they will be acting as advisors and mentors for the three finalists. They will also be joining the judges for the final tasting. Matthew, Chris and Sally are intimidated, but anxious to get started. Who would be the Top Chef: Just Desserts winner?

Soon enough my main lunch meal came out. At this point I wasn't sure I was going to be able to eat it after having the focaccia bread and then the shaved parma prociutto but I was going to give it my best shot. For my main entree, I ordered the Baby Spinach Salad with Steak. The salad was filled with baby spinach leaves, white beans, roasted beets, kalamata olives and red onions then had feta cheese sprinkled over top. The salad was pre-mixed with an olive oil vinaigrette dressing. Thick, tender, medium rare piece of steak topped off the entire dish. I would go back to eat this dish over and over again. The salad was perfect and the steak was made just right with no need for seasoning. I am often the one to salt and pepper dishes wherever I go but this dish needed nothing.

Entering the Rustic Kitchen, we were greeted by a friendly hostess who asked us where we preferred to be seated. There are several dining areas in the establishment including an area in the back that boasts an exposed pasta station. However we wanted to watch the gambling crowd so chose to sit at a high table near slow cooker focaccia the front bar entrance.

I might even do what Radar O'Reilly did in an episode of M*A*S*H: To spare an innocent lamb from becoming dinner for Greek soldiers, he stole it and replaced it with Spam shaped like a lamb. Not only do I admire that kind of ingenuity, I look forward to working with my hands and Spam.
