Each year on May 5, the St. Louis area comes alive with Cinco De Mayo (5th of May) celebrations. Though the St. Louis are is made up of only approximately 2.3% Hispanic/Latino population, everyone enjoys a good Cinco De Mayo celebration or party. In a 5 or 6 -quart slow cooker chicken taco or crockpot combine the chicken, onion, celery, carrots, parsley, garlic, bay leaf, thyme, salt and pepper. Pour the chicken broth over the mixture. Cover and cook on high for 4 to 5 hours or low for 8 to 10 hours.
