Each year on May 5, the St. Louis area comes alive with Cinco De Mayo (5th of May) celebrations. Though the St. Louis are is made up of only approximately 2.3% Hispanic/Latino population, everyone enjoys a good Cinco De Mayo celebration or party. If you are hosting a Cinco De Mayo party or just enjoy food with a Mexican flair, following are 5 easy, frugal recipes to enjoy.

I convinced some other friends to go back. With another beautiful night, we were lucky to get another table outside. I wasn't as crazy about the Dallas as I was with the Tokyo, but I got my fix.

For their combination dinners you can order the Tex-Mex which is one crispy beef taco and guacamole; with also one beef enchilada topped with spicy sauce, or the Santa Rita which is one soft taco chicken and guacamole, as well as one chicken enchilada topped with tomatillo sauce for $9.95, or even el rey which is one soft taco chicken with guacamole; followed by one chicken enchilada topped with tomatillo sauce, a beef fajita taco in a flour tortilla and one taco beef chalupa for $12.50.

In a 5 or 6 -quart slow cooker chicken taco or crockpot combine the chicken, onion, celery, carrots, parsley, garlic, bay leaf, thyme, salt and pepper. Pour the chicken broth over the mixture. Cover and cook on high for 4 to 5 hours or low for 8 to 10 hours.
